After washing the Japonica rice (3 cups), soak it in water for 30 minutes before cooking 2. Cook in rice cooker and leave it for 15 minutes after the rice is cooked 3. Prepare sushi vinegar by mixing rice vinegar (3 1/4 cups), sugar (3 tablespoons) and salt (1 teaspoon) in a sauce pan 4. Put the pan on low heat until the sugar and salt dissolves and cool the vinegar mixture 5. Spread the hot steamed rice into a large non-metallic plate or bowl (Best to use a wooden bowl to help the rice to cool quickly) 6.Sprinkle the vinegar mixture over the rice and fold the rice with a spatula or wooden spoon quickly 7. Store the sushi rice at room temperature and cover with a damp cloth 8.
